Confessions!
I, Susan Blech, confess-- I've turned my obsession with food into a passion for food! I lost weight with healthy carbohydrates, low fat and low sodium dishes. I've come up with this yummy recipe for holiday gatherings...
Susan's Potatoes and Peppers
2 pounds of creamer potatoes
2 frozen packages of cut peppers
(You can use fresh red peppers, yellow peppers and orange peppers, but frozen also taste good and are less expensive and less time consuming).
3 tablespoons of olive oil
½ cup white wine
6 whole garlic cloves
Pepper, to taste
-Place washed creamer potatoes in deep pan.
-Place cut peppers in pan, under and around potatoes.
-Put olive oil in and around potatoes and peppers.
-Place 6 whole garlic cloves in pan.
-Sprinkle a little black pepper onto potatoes.
-Add white wine.
-Cook for 45-55 minutes.
I like to make this dish the day before I need it because the peppers are so incredibly sweet the next day. Enjoy!!! More tasty, healthy carb, low sodium recipes in Confessions of a Carb Queen!

* Don't wait until Monday morning (that was one of my favorite diet lies, read about it in the book!) to start eating healthy, taking that first step. This isn't a diet, this time. This is life.
